It can be used like any other gluten-free flour, in cakes, pancakes, fritters and various pastries. To use this flour, simply replace the measures of a classic flour by the same quantity of sweet potato flour. It comes in the form of a very fine powder, which can give a less firm and thick appearance to your preparations, but the result will be no less delicious. The key is to trust its thickening properties (a bit like cornstarch) and let the cooking do the rest. Store in a dry place, away from light.
