Coconut-chocolate ice creams Magnum-style

An ultra-creamy plant-based ice cream made with coconut milk and cream, naturally sweetened with yacon syrup, and coated in melting dark chocolate. A healthy alternative to store-bought ice cream bars, perfect for those summer cravings!
Ingredients
For the ice cream:
- 200 ml of coconut milk
- 160 ml of coconut cream
- 1 tbsp of yacon syrup
- 50 g of shredded coconut
For the coating:
- 150 g of 80% dark chocolate
- 1 tsp of coconut oil
- (Optional: 1 tbsp of crushed almonds)
Recipe
- Blend all the ice cream ingredients until smooth.
- Pour the mixture into ice cream bar molds and place in the freezer for at least 4 hours.
- Melt the chocolate with coconut oil (and almonds if desired).
- Unmold the ice creams, dip them quickly into the melted chocolate, and return them to the freezer for 5 to 10 minutes to allow the coating to harden.
