Vegan protein omelette

A tasty, plant-based protein alternative to the classic omelette, ideal for egg-free diets. This savory pancake has a fluffy texture and an egg-like flavor. Perfect for brunch, a light lunch, or a quick meal.
Ingredients
- 30 g chickpea flour
- 75 ml water
- 1/4 tsp salt
- 1 tbsp nutritional yeast
- 1 tbsp olive oil
- 1 tsp ground black pepper
- 1 handful of finely chopped vegetables (mushrooms, spinach, tomatoes...)
- Chopped fresh herbs (optional)
Recipe
In a bowl, mix the chickpea flour, nutritional yeast, salt, and pepper. Gradually add the water while whisking to get a smooth batter.
Add the vegetables directly into the batter or keep them to garnish after cooking, as you prefer.
Heat the oil in a pan over medium heat. Pour the batter and tilt the pan to spread it evenly.
Cook for about 5 minutes, until the edges lift and bubbles appear. Fold for a soft texture or flip to cook both sides.
Add the vegetables, fold again, and serve warm with fresh herbs on top.
