Gluten-free and cholesterol-free, coconut flour is perfect for people who are intolerant or sensitive. Coconut flour is delicious and hides many nutritional virtues.
With 20% protein and 8 essential amino acids, it is definitely a friend of vegetarians or vegans. Coconut flour is very rich in fiber. It contains more fiber than other popular foods such as bran, flaxseed and prunes. It has a very low glycemic index contrary to cereal flours, and therefore is really beneficial to limit sugar intake. It contains: calcium, iron, selenium, source of vitamins B, C, E.
Obtained from dried and defatted coconut, this flour is light, airy and offers a subtle coconut flavor. In baking, it does not rise and has no elasticity but it makes up for it with its naturally sweet taste which makes it ideal for the preparation of drinks (vegetable milks, smoothies, hot chocolate...) or gourmet desserts (mousses, cookies, pancakes...), it can also be added directly to a compote, a yogurt, a soup, and at the same time its nutrients are kept intact because it is then raw.
