A kombucha is a refreshing, sparkling drink of Asian origin and is the result of a fermentation process. It is made from green tea and aromatic plants, with morello cherry and mint juice. Our kombucha has been pasteurized, which allows it to be kept at room temperature until it is opened. But concretely, what is the difference between a pasteurized kombucha and an unpasteurized one? During pasteurization, the enzymes created during fermentation are deactivated, which prevents post-fermentation. In addition to being recognized for its thirst-quenching virtues, this drink has many health benefits. It contains lactic and acetic acid, vitamins and minerals. Kombucha therefore has a detoxifying effect and ensures healthy digestion. For the record, legend has it that a Korean doctor used this drink to treat a Japanese emperor's stomach ailments. The name "kombucha" is said to be derived from the doctor's surname "Kombu" and the Japanese word for "tea", "cha". It has therefore long been considered a miracle cure!
