Rice contains no gluten and this flour is made of 100% organic wholegrain rice. However, it is milled in a facility that also handles other cereals: it may contain traces of gluten and soy.

What is the difference with white rice flour?

Wholegrain rice flour is made from the whole grain, bran included. It has a slightly beige colour, a little more flavour and is a source of fibre, whereas white rice flour is more neutral.

Can I replace wheat flour with wholegrain rice flour?

Not entirely in a recipe that needs to rise: without gluten, the dough cannot hold the gas. Blend it with another flour or a starch and add a binder such as an egg. For crêpes, pancakes or to thicken a sauce, it can be used on its own.

Where does the rice come from?

The rice is grown in the Camargue and milled in south-west France. The flour is certified organic.

How should I store wholegrain rice flour?

Dry, cool and away from light, in its tightly closed bag or in an airtight jar. As it contains the germ of the grain, it keeps less long than white flour: preferably use it within 2 to 3 months of opening.
