Pecan nut cookies

Treat yourself to these pecan nut cookies, combining crunchiness and sweetness. Easy to make, they’re perfect for a delicious snack or to enjoy with a cup of coffee or tea.
Ingredients
For the cookies:
- 3 cups oat flakes
- 1 ½ cups flour
- ½ cup coconut sugar
- 3 tbsp ground flax seeds
- 9 tbsp water
- 160g almond & pecan butter
- 70g coconut oil
- 2 tsp baking powder
For the cream:
- 100g vegan cream cheese
- 150g coconut cream
- 1 tbsp pecan butter
- 1 tbsp yacon syrup
Recipe
For the cookies:
- Preheat the oven to 175°C (347°F).
- Mix the ground flax seeds with water and let sit.
- Combine all the other ingredients, then add the flax and water mixture.
- If needed, add a bit more water to the dough.
- Bake for 15 minutes at 175°C.
- Let cool completely.
For the cream:
- Whip the coconut cream with the yacon syrup and pecan butter.
- Gradually add the vegan cream cheese, one spoon at a time, and keep whipping.
- Spread the cream on the cookies.
