Here’s a delicious and super quick version of chia pudding.

Ingredients

  • 1 glass of almond milk
  • 1/4 glass of chia seeds
  • 1 tablespoon of yacon syrup
  • 1 tablespoon of cocoa powder
  • 1 handful of raspberries
  • 1 tablespoon of coconut yogurt
  • 1 tablespoon of puffed quinoa
  • 1 teaspoon of chocolate chips

Recipe

  1. In a jar, combine the almond milk, chia seeds, yacon syrup, and cocoa powder. Mix well for 2 minutes to avoid clumping.
  2. Let sit in the fridge for at least 4 hours — overnight is even better!
  3. For the topping, add a generous spoon of coconut yogurt, a handful of raspberries, puffed quinoa, and a few chocolate chips.
  4. Ready to enjoy!
