Organic brown wholegrain basmati rice, sold loose. The grain keeps its bran layer: it stays firm once cooked, the texture is denser than white rice and the basmati aroma still comes through. It provides 8.3 g of protein and 3 g of fibre per 100 g. 1 kg bag.

Rinse the rice under clear water until it runs clean. Soaking it for thirty minutes softens the grain, shortens the cooking and makes it more even. Use one volume of rice to two and a half volumes of salted water: bring to the boil, then simmer gently for about 45 minutes, until the water is fully absorbed. Let it stand for five minutes off the heat before separating the grains with a fork. It goes with curries, roast vegetables and slow-cooked dishes, and works cold in a salad.

How long does it need to cook?

About forty-five minutes on a low simmer once the water boils. The bran around the grain slows the water down. Kazidomi Vrac advises rinsing it first; a soak beforehand cuts that time and gives a more even result between the centre of the grain and its surface.

Do I really have to soak it?

Not obliged, but it helps: a few hours in cold water soften the husk, shorten the cooking and stop grains staying hard in the middle. Kazidomi Vrac recommends it for this brown basmati. Throw the soaking water away and rinse the rice again before it goes in the pan.

Brown basmati or white basmati: which should I pick?

The brown is wholegrain: husk still on, firm bite, a nutty taste, about forty-five minutes in the pan. The white basmati from Kazidomi Vrac is hulled and polished, softer, more strongly scented and done in fifteen. The one-kilo bag is the same either way.

What do I serve it with?

With a vegetable curry, a dhal, roast vegetables or a spiced pan of greens, where its firm hold stands up to sauce. Kazidomi Vrac brown basmati also works in cold salads and in meals cooked ahead, because the grains do not collapse as they cool down.

How do I store it?

In an airtight jar, dry, out of the light and away from heat. A wholegrain rice still holds the fats of the germ and the bran, so it keeps for less time than a white one. Since Kazidomi Vrac sells by weight, the amount you buy is easy to match to how fast you get through it.
