How much orange is in this bar?

Orange makes up 5% of the recipe, as peel, alongside a natural orange flavouring at under 1%. The rest is cocoa: cocoa mass at 62.4%, cocoa butter at 7.4%, cane sugar and a touch of vanilla. The Kazidomi bar carries a minimum of 72% cocoa.

Dark chocolate 72% orange or 72% sea salt — which one?

Same 72% cocoa base at Kazidomi, two opposite profiles. The orange brings citrus peel and a tart edge that lightens the bitterness. The sea salt version leaves the cocoa bare and plays on the salt-and-bitter contrast, drier on the palate. Orange goes better with coffee, salt is best eaten on its own.

Where does the cocoa in this bar come from?

The beans come from the Dominican Republic and the bar is made in Belgium. The agricultural ingredients are organic and the cocoa supply chain is Fairtrade certified, a label covering the terms on which growers are bought from. Kazidomi sells this chocolate as a thin 85 g bar.

Does this bar contain milk or nuts?

No dairy ingredient and no nut goes into the Kazidomi recipe: cocoa mass, cane sugar, cocoa butter, orange, vanilla and natural orange flavouring. The label does flag possible traces of milk, soya, almonds, hazelnuts, pistachios and walnuts, arising from the workshop where it is made.

At what temperature should dark chocolate be kept?

Between 12 and 18°C, away from damp and heat. The fridge is a poor idea: Kazidomi chocolate takes up moisture there and loses its snap. A pale film appearing after a swing in temperature causes no problem at all, being cocoa butter risen to the surface, with no effect on taste.
