Pasta salad with homemade red pesto and smoked tofu

A flavorful pasta salad, packed with plant-based proteins and Mediterranean flavors. Perfect for weekday lunches or to take on a picnic, it becomes even tastier as the days go by. Homemade sun-dried tomato pesto, colorful veggies, and smoked tofu make for a delicious, well-balanced meal.
Ingredients
- 180 g Kazidomi whole grain rice penne
- 200 g cherry tomatoes
- 1 red onion, thinly sliced
- 2 large handfuls of arugula
- 250 g smoked tofu, diced
- 2 roasted red peppers
For the red pesto:
- 1 roasted red pepper (jarred or homemade)
- 6 to 8 sun-dried tomatoes, drained
- 1 tbsp tomato paste
- 1 tsp garlic powder or garlic purée
- ½ tsp chili flakes
- Juice of ½ lemon
- 1 generous handful of fresh basil
- 6 pitted olives
- 30 g grated Parmesan (or nutritional yeast for a vegan version)
- A pinch of salt
Recipe
Cook the rice penne in a large pot of salted water until very soft (don’t leave them al dente). Drain, reserving some of the cooking water.
Prepare the pesto: blend all the pesto ingredients in a food processor until smooth. Add a little pasta cooking water if needed to loosen the sauce.
In a large salad bowl, mix the cooled pasta with the cherry tomatoes, red onion, smoked tofu, roasted peppers, and arugula. Stir in the pesto and mix well.
Store in an airtight container in the fridge. This salad gets even better after a day — perfect for batch cooking or packed lunches.
