Oat and zucchini meatballs

Try this easy zucchini meatball recipe, perfect for both adults and children! Even more delicious when dipped in a yogurt sauce. Serve as an appetizer or alongside your main dish.
Ingredients
- 1 zucchini
- 90g of oats
- 2 eggs (or 1 large)
- 40g of grated parmesan
- 1 onion
- 1 garlic clove
- Dried oregano
- 1 tsp of sweet paprika
- 1 tbsp of extra virgin olive oil
Recipe
- Preheat the oven to 180°C.
- Grate the zucchini, place it on a clean towel, and squeeze out as much water as possible.
- Mix the drained zucchini with the rest of the ingredients in a bowl.
- Form into balls and place them on a baking tray before putting them in the oven.
- Tip: Dip them in a homemade sauce made with coconut yogurt, curry, and olive oil. Guaranteed delight!
