Air Fryer Protein Balls

These quinoa and tofu balls, cooked in the Air Fryer, are a great option for a tasty and balanced vegetarian meal. With a touch of tamari sauce, garlic, and tomato paste, they are full of flavor. Served with a fresh salad and a light dressing, they make a complete, nutritious, and delicious meal—perfect for a light lunch or dinner.

Ingredients

For the balls:

  • 1 cup cooked quinoa
  • 1 block firm tofu
  • 1 red onion, finely chopped
  • 1 tablespoon tomato paste
  • 1 tablespoon olive oil
  • 1–2 tablespoons tamari soy sauce
  • ½ teaspoon garlic powder
  • Salt and pepper

For the salad:

  • Mixed young greens (arugula, spinach, lamb’s lettuce)
  • 1 avocado, sliced
  • 1 tablespoon light dressing (olive oil, apple cider vinegar, mustard)

Recipe

  1. In a blender or a large bowl, combine the cooked quinoa, crumbled tofu, red onion, tomato paste, olive oil, tamari, garlic powder, salt, and pepper. Blend until smooth (or cut ingredients into small pieces and mix well by hand).
  2. Take a small portion of the mixture and roll it between your hands to form walnut-sized balls.
  3. Preheat the Air Fryer to 180°C (356°F). Arrange the balls in a single layer in the Air Fryer basket, making sure not to overcrowd. Cook for 20 minutes, turning halfway through for even browning.
  4. While the balls cook, prepare the salad by mixing the greens and sliced avocado in a large bowl. Add the dressing and gently toss.
