Crispy Cauliflower Bites

These crispy cauliflower bites, served with whole wheat penne and a green salad, are a healthy and tasty option for a complete meal. Coated in a light batter and oat-flake breadcrumbs, they bake to a perfect golden finish. Soy sauce and yacon syrup add a touch of indulgence, while oat milk keeps the batter light. Perfect for a balanced, vegetarian, and easy-to-make dinner!
Ingredients
For the cauliflower bites:
- 1 head cauliflower, cut into florets
- 50 g whole wheat flour or spelt flour
- 1 tablespoon garlic powder
- 1 tablespoon soy sauce or tamari
- 100 g oat flakes, blended for breadcrumbs
- 170 ml oat milk
- Salt and pepper
For the sauce:
- 2 tablespoons plain yogurt (or Greek yogurt for more protein)
- 1 tablespoon soy sauce or tamari
- 1 tablespoon yacon syrup
- 1 garlic clove, minced
- 1 tablespoon water (to adjust consistency)
For the side:
- 200 g whole wheat penne (or any whole-grain pasta of your choice)
- Green salad
- Dressing of your choice
Recipe
- Preheat the oven to 180°C (356°F). Cut the cauliflower into small florets.
- In a bowl, mix the flour, garlic powder, soy sauce, and oat milk. Season with salt and pepper.
- In another bowl, place the oat-flake breadcrumbs and season with salt and pepper.
- Dip each cauliflower floret into the batter mixture, then coat with the breadcrumbs. Arrange on a baking sheet lined with parchment paper.
- Bake for 25–30 minutes, until golden and crispy.
- Meanwhile, cook the whole wheat penne according to package instructions. Drain and set aside.
- Toss the salad with your preferred dressing.
- Serve the crispy cauliflower bites with the penne and green salad.
