Green soybeans are mainly consumed sprouted, but they can also be eaten cooked as an accompaniment to rice and vegetables, for example. It is very rich in protein, calcium, iron, phosphorus and fibre.
They have specific nutritional interests: they are rich in protein and fibre. Their composition is similar to that of other dried vegetables: low fat, high protein (25%) of good quality, starch, fibre and abundant micro components (minerals, vitamin B9+...). Their omega 3 fatty acid content, close to that of yellow soybeans, is 10 times higher than that of other legumes.
