Beef broth or chicken paprika broth: which one for my dish?

The Kazidomi beef broth simmers 33% beef bones with ginger, lemongrass, rosemary and thyme, so it lands deep and savoury: good under a risotto or a slow-cooked dish. The chicken paprika version is lighter and built around paprika and turmeric instead. Both are organic and both are made in Belgium.

Does this broth contain allergens?

Yes, celery, which must be declared on the label. It sits in the recipe alongside carrot, onion and leek. The Kazidomi beef broth lists no gluten-containing cereal and no dairy ingredient. Anyone sensitive to celery should leave it aside, including when it is only serving as the base of a soup.

How do I use it in cooking?

Warmed through gently, it can be drunk straight from a bowl. The Kazidomi beef broth also works as a base: the liquid for a risotto, the start of a vegetable soup, or the cooking liquid for braised meat or grains. One 480 ml pack gives two bowls, or the base of a dish for two.

How long does it keep once opened?

Three days in the fridge, in a closed container. Before opening, the Kazidomi broth sits in a cool dry cupboard and needs no refrigeration at all. Reheat only what you need rather than the whole pack: a broth heated and cooled several times loses flavour and does not hold as well afterwards.

Why does it set solid in the fridge?

Because it is made from beef bones simmered for a long time. The gelatine drawn out of those bones sets once cold and gives the Kazidomi broth a firm, wobbly texture straight from the fridge. It turns liquid again as soon as you warm it gently. That is a sign of long cooking, not of a fault.
