Extra Virgin Olive Oil Organic

Why is this oil sold in a metal tin?

Because metal is opaque and shields the oil from light, which spoils it faster than air does. Kazidomi offers this 3000 ml format for regular use in the kitchen. The tin opens by lifting the wings on the cap, then pulling it upwards before turning it.

Single-variety or blended olive oil: what changes?

This Kazidomi oil is single-variety: it comes from koroneiki alone, harvested in Crete, rather than from several varieties assembled together. That gives a profile which repeats itself from one year to the next, mild in flavour. A blend evens out harvests instead, and its character shifts with the mix.

What does extra virgin mean on the label?

That the oil sits at the lowest acidity level and comes out by mechanical extraction alone, with no heat above 27 °C and no solvent. Kazidomi applies the same standard to the 3000 ml tin as to the 1000 ml bottle: it is the same Cretan oil in a larger container.

Can I decant the oil into a bottle?

Yes, and it is genuinely useful with a three-litre container, which is awkward to handle day to day. Fill a small dark glass bottle to keep by the worktop and close the Kazidomi tin again straight away. The less time the oil spends in contact with air, the better it holds its aromas.

Where should a tin this size be kept?

Somewhere cool and dry, out of sunlight and away from heat, so not above the hob. Kazidomi specifies that it should not go in the fridge. A low cupboard works well, as long as the cap is screwed back on firmly after every use.
