Fresh quinoa salad Jennifer Aniston style

Inspired by the famous salad that Jennifer Aniston is said to have eaten every day on the set of Friends (yes, really), this recipe is a burst of freshness and healthy proteins.

Ingredients

1 cup of quinoa
2 cups of water
1 can of chickpeas (400 g drained)
1 cup cucumber, diced
½ cup pistachios, roasted and salted, crushed
½ cup flat-leaf parsley, chopped
½ cup fresh mint, chopped
⅓ cup red onion, finely sliced
½ cup crumbled feta (you can replace with pesto lacto-fermented tofu)
5 to 6 tbsp lemon juice
¼ cup extra virgin olive oil
Salt and pepper

Recipe

Rinse the quinoa under cold water, then cook it with 2 cups of water. Bring to a boil, then reduce the heat and simmer covered for 15 minutes. Fluff with a fork and let cool for 5–10 minutes.
In a large bowl, combine the cooked quinoa, cucumber, parsley, mint, red onion, pistachios, chickpeas, lemon juice, olive oil, salt, pepper, and feta.
Serve fresh or let sit in the fridge for 1–2 hours to allow the flavors to develop. Even better the next day!
