Rinse the quinoa under cold water, then cook it with 2 cups of water. Bring to a boil, then reduce the heat and simmer covered for 15 minutes. Fluff with a fork and let cool for 5–10 minutes.
In a large bowl, combine the cooked quinoa, cucumber, parsley, mint, red onion, pistachios, chickpeas, lemon juice, olive oil, salt, pepper, and feta.
Serve fresh or let sit in the fridge for 1–2 hours to allow the flavors to develop. Even better the next day!
