The Girolomoni cooperative sources wheat from over 400 organic farms, mostly located in the Marche region of Italy. The grain is milled at the Montebello mill, near Urbino, to preserve its full nutritional value.

A pioneer in organic wholegrain since the 1970s, Girolomoni uses cold stone milling to retain all parts of the grain — bran, germ and endosperm — for maximum fibre, minerals and a delicate, authentic flavour.
