Miso is a traditional fermented soybean food in Japan that is well known for its intense flavor and concentrated nutrition. High in protein, clearspring's organic hatcho miso has a strong salty taste and is made to the same original recipe for 400 years with extended aging in cedar barrels. Miso is both a seasoning and a base for soups or sauces. It easily replaces salt in everyday cooking and enhances the taste of grains, beans and vegetables. In other words, it's a must-have in your kitchen.

During the 18 years that Christopher Dawson, the founder of Clearspring, lived in Japan, he became an expert on the quality of miso. He sought to develop a Clearspring line of the finest traditionally made Japanese miso.

Instructions

Try it instead of salt to flavor dishes such as soups, stews, beans, sauces and spreads. One teaspoon of Hatcho Miso will season about one cup of liquid. Dilute in a little cooking liquid and add towards the end of cooking. Avoid prolonged boiling to preserve the enzymatic properties of this unpasteurized miso

Blends well with ingredients such as ginger, garlic, rice vinegar, tahini, lemon zest and juice

Store in a cool, dark place. After opening, keep refrigerated and use it within 6 months

Miso is a living product and the ongoing fermentation may cause the lid to swell. However, it is safe to eat. Harmless white yeast may develop when exposed to air. Just skim them off
