Matcha Powder Organic

How do I make a matcha?

Whisk it into hot water at 70 °C, never boiling, or stir it into a plant or dairy milk for a latte. Kazidomi gives one gram for 70 to 100 ml of water, and three grams in 200 ml of milk. A whisk or a frother keeps the lumps out.

Does it contain caffeine?

Yes. Matcha is ground green tea, so caffeine comes with it, and Kazidomi states 0.13 g per portion on the pack. Unlike an infusion, the whole leaf is swallowed, because it has been milled to a powder rather than steeped in water and then lifted out.

Matcha or loose leaf green tea: what is the difference?

The Kazidomi matcha is milled leaf: it goes into suspension in the cup and can be baked with. Loose leaf tea is steeped and then thrown away. Matcha gives an opaque, bright green drink, more vegetal and thicker in the mouth than an infusion made from whole leaves.

What else can I put it in?

A latte, a smoothie, a set cream, an icing, shortbread or a sponge, and savoury things too, such as a dressing or a rice seasoning. The Kazidomi matcha colours strongly, so a small amount is enough to take a batter green rather than merely tint it.

How do I store matcha?

Somewhere cool and dry, bag closed after opening, as Kazidomi states. The powder oxidises in air and light: a matcha that has turned yellow-green has lost its scent. The 75 g size is meant to be used over a few weeks rather than kept for a season.
