Ingredients

  • 150 g firm tofu, cut into cubes
  • 1 tablespoon of Pulse Peanut Butter
  • 1 tablespoon of tamari sauce
  • 1 tablespoon of lime juice
  • 3 to 4 tablespoons of water
  • 1/2 teaspoon of grated ginger
  • 1 bowl of cooked quinoa
  • Vegetables of your choice: carrots, zucchini, bell peppers...
  • A few coriander leaves (for garnish)

Recipe

  1. Mix the peanut butter, soy sauce, lime juice, water, and ginger to create a smooth sauce.
  2. Sauté the tofu cubes in a hot pan with a little oil, then add the sauce. Stir well to coat the tofu.
  3. Serve the tofu over a bowl of quinoa with the vegetables, and sprinkle with turmeric and coriander.
