These vegetarian quinoa and broccoli burgers are a healthy, tasty alternative packed with plant-based protein. Easy to prepare and rich in fiber, they can be enjoyed baked in the oven or pan-fried. A balanced and delicious dish, perfect for a healthy weekday meal or to surprise your guests.
Cook the quinoa and broccoli separately for about 10 minutes.
Blend all the ingredients together: quinoa, broccoli, onion, chickpea flour, rice breadcrumbs, nutritional yeast, lemon juice and spices. Do not overmix to keep a nice texture.
Let the mixture rest in the fridge for 30 minutes so the flour and breadcrumbs can absorb the moisture.
Form small patties and bake at 180°C for 20 minutes (or pan-fry with a drizzle of olive oil).
Serve these delicious healthy burgers with avocado purée!
