A super tasty and spicy dish with crispy turmeric tofu, a mix of fresh veggies, and a touch of sriracha and lime. Perfect for a quick, protein-packed meal in a nourishing bowl.
Crumble the turmeric tofu into a large bowl, breaking it into pieces no larger than 2x2 cm cubes.
Add the edamame, corn, and cashews to the tofu. Mix well.
Add the sriracha, lemon juice, and salt. Mix again until everything is well coated.
Spread the tofu, edamame, and corn mixture into the air fryer basket. Don’t overcrowd—cook in two batches if needed.
Cook for 10–15 minutes at 200°C, until the tofu and edamame are lightly browned and crispy.
Let cool slightly, then serve in a bowl. You can top with fresh veggies or seeds for extra crunch.
Tip: This bowl is perfect to customize with seasonal vegetables, rice or noodles. It can also be meal-prepped in advance for quick and tasty lunches all week long!
