  1. Melt the dark chocolate with the coconut oil in a double boiler.
  2. In a large bowl, mix the puffed quinoa with the melted chocolate, peanut butter, and melted coconut oil. Stir until you have a well-blended mixture.
  3. Pour the mixture into small individual molds (a simple loaf pan will also work), pressing lightly to create an even thickness.
  4. Place the mold(s) in the freezer and let rest for 1 hour for the mixture to harden.
  5. After the time has passed, remove the mold and cut into bars or squares, or remove each biscuit from its individual mold. Your gluten-free puffed cereal biscuits are ready to be enjoyed!
