Split peas a variety of large round peas. Harvested at full maturity, they are dried and split in half when peeling, hence the name. Split peas provide delicious purees and soups. They are a good source of iron, manganese, copper, vitamins B1 and B9. Like all legumes, they are high in protein and fiber.
