Blond Cane Sugar in Bulk Organic

What is a blond cane sugar?

A partly refined sugar: the crystals keep a share of their molasses, hence the golden colour and the light note of caramel. The Kazidomi Vrac bag holds nothing but organic cane sugar, with no colouring and no additive, sold by weight in a one-kilo pack.

Blond or whole cane sugar?

The Kazidomi Vrac blond is paler, drier and more neutral: it is measured like white sugar and dissolves easily. The whole one, unrefined, keeps all its molasses, colours a preparation strongly and brings a far more pronounced taste of liquorice and caramel.

Which recipes is it for?

Hot drinks, baking, stewed fruit and jams, but also savoury preparations, to balance the acidity of a tomato sauce. Kazidomi Vrac blond sugar replaces white sugar weight for weight, leaving a batter barely more golden than it would otherwise be.

Where does it come from?

From Mozambique, where the cane is grown under organic farming rules. Kazidomi Vrac offers it for sale by weight, which lets you buy the quantity you need. The bag holds nothing but cane sugar, with no blending with any other sugar.

How is it stored?

In a closed jar, somewhere dry, away from heat and from the strong smells it readily takes up. Kazidomi Vrac blond sugar stays dry longer than a whole sugar, but hardens if it takes up damp: a fork is then enough to break the clumped crystals apart.
