Coconut Sugar Fairtrade Organic

Where does coconut sugar come from?

From the sap of the coconut palm, collected and then heated until it crystallises. The Kazidomi 400 g jar holds nothing else: organic coconut blossom sap, at 100%. The range is Fairtrade certified and the sap is collected by smallholders in Sri Lanka.

What does it taste like?

Caramel and brown sugar, more pronounced than white sugar, with a brown colour to match. The Kazidomi coconut sugar therefore flavours a preparation while it sweetens it, which suits rustic baking, crumbles and cookie dough far better than a delicate mousse or a pale icing.

How do I use it in the kitchen?

It stands in for refined sugar in a recipe, measures out by the spoon and dissolves in a hot liquid. The crystals of the Kazidomi coconut sugar are coarser than white sugar, so a quick run through a blender gives the finer powder that icings and smooth batters need.

The 400 g jar or the 750 g one: which suits me?

The 400 g size fits occasional use, in baking or stirred into hot drinks. The 750 g jar from Kazidomi is for anyone who has adopted it as their everyday sweetener and reaches for it several times a day. The sugar inside is the same coconut blossom sap in both.

Why does it set into lumps?

Because it draws moisture out of the air and the crystals cake together into solid blocks. That is not a manufacturing fault. Crushing them with a fork breaks them apart again. Kazidomi advises keeping the jar closed and dry, away from the steam of a hob or a kettle.
