Strong Ground Coffee Fairtrade Latin America & Tanzania Organic

How much ground coffee per cup?

About 7 g a cup. Kazidomi advises dampening the filter, using soft water, and pouring slowly with water that is simmering rather than boiling. This full-bodied coffee takes a slightly more generous dose if you are after an even more intense cup.

Full-bodied or balanced ground coffee: which one?

This blend puts 40% Tanzanian robusta behind its arabica, which gives bitterness, body and more caffeine. The Kazidomi balanced version is a pure Peruvian arabica, softer and finer, with a discreet acidity. One suits a short strong cup, the other a long one.

What is in this blend?

Sixty per cent arabica from Latin America and forty per cent robusta from Tanzania, organic and traded under fair trade terms. That mix gives the Kazidomi coffee a full-bodied cup, sitting between acidity and bitterness. The roasting is carried out in France, in Alsace.

What water should I use for extraction?

Soft water, poured slowly, simmering but not boiling: past that the coffee scorches and turns acrid. Kazidomi also recommends dampening the filter before adding the grounds, which keeps the taste of paper out. Water that is too hard masks the aromas of the full-bodied blend.

How do I keep an opened pack?

Away from heat, damp and light, in an airtight tin rather than the folded bag. Kazidomi ground coffee exposes far more surface to the air than whole beans do and loses its aromas faster, which is why the beans come in a one-kilo pack and the grind in 250 g. Avoid the fridge, where it takes up smells.
