Xylitol is a natural sweetener, produced from one of the constituents of birch wood, hemicellulose. This manufacturing process does not require the use of chemical solvents, and xylitol can be considered as a natural product as opposed to synthetic chemical sweeteners such as aspartame or acesulfame K. Xylitol has nutritional benefits and offers a healthier alternative to sugar, thanks to its very low glycemic index (7-8). It does not cause a blood sugar spike and is therefore particularly suitable for diabetics. Xylitol has a sweetening power equal to raw sugar, but 30% higher when cooked: in pastries, use 70g of Xylitol for 100g of sugar. In baking, cooking increases the sweetening power of xylitol by about 30%. For example, 70g of xylitol is equivalent to 100g of sugar. Store in a dry place and away from light.
