Express protein buns

A quick recipe, with no yeast and no kneading. These protein-rich buns are ready in no time with just three ingredients. No yeast, no resting, just cottage cheese, almond flour, and a little baking powder.
Enjoy them for breakfast, as toast, or after your workout.
Ingredients
- 230 g cottage cheese or plant-based skyr
- 1 cup (2.6 dl) almond flour
- 1.5 tsp baking powder
- 1 tsp salt (optional)
For finishing: 1 beaten egg + sesame seeds
Recipe
Preheat the oven to 180°C.
In a bowl, mix the cottage cheese (or plant-based skyr), almond flour, baking powder and salt until you get a smooth dough.
Divide the dough into 4 portions and shape small buns by hand.
Place them on a baking sheet lined with parchment paper, then brush with the beaten egg. Sprinkle with seeds if desired.
Bake for about 30 minutes, until golden and baked through.
Enjoy warm or cooled, as you prefer.
Keeps 2–3 days in an airtight container.
