The combination of crunchy cabbage, roasted sweet potatoes, and spiced chickpeas, topped with a creamy avocado and yogurt dressing, makes it a dish that’s as healthy as it is tasty.

Ingredients

  • 2 handfuls of finely shredded white cabbage
  • 1/2 avocado
  • 3 tbsp organic yogurt
  • 30 g feta cheese
  • 1 tsp Dijon mustard
  • 1 tsp yacon syrup
  • 1 generous handful of fresh basil
  • Juice of one lemon
  • 200 g sweet potato, diced with skin on
  • 1 can of chickpeas, drained
  • 1 tsp cornstarch
  • 1 tbsp olive oil
  • Salt and pepper
  • Pomegranate seeds for topping
  • Optional: 1 tsp harissa paste

Recipe

  • Preheat the oven to 200°C (fan mode).
  • In a bowl, mix the sweet potato cubes with olive oil, optional harissa, salt, and pepper. Spread on a baking sheet and roast for 25 minutes, stirring halfway through.
  • Meanwhile, pat the chickpeas dry with a clean cloth. Toss them with cornstarch, salt, and a drizzle of olive oil. Add them to the baking sheet during the last 10 minutes of cooking, until golden and crispy.
  • Prepare the sauce: in a blender, mix the avocado, yogurt, feta, mustard, yacon syrup, lemon juice, and basil. Season to taste and adjust with more lemon or yacon if needed.
  • Finely slice the white cabbage and mix it with two-thirds of the sauce. Let it marinate for a few minutes to soften.
  • Assemble the salad: divide the marinated cabbage into two bowls, add the roasted sweet potatoes and crispy chickpeas. Sprinkle with crumbled feta and pomegranate seeds.
  • Serve with the remaining sauce on the side.
