    Ingredients

    For the base:

    • 1 cup almonds
    • 1 cup cashews
    • 1/2 cup shredded coconut
    • 2 tbsp maca powder
    • 2 tbsp cacao powder
    • 1 cup dates
    • 2 tbsp peanut butter
    • 3 tbsp almond milk

    For the topping:

    • 2 cups frozen raspberries
    • 2 tbsp açai powder
    • 1 to 2 tbsp rice malt syrup
    • 2 tbsp melted coconut oil
    • 3/4 cup shredded coconut
    • 1/4 cup chia seeds
    • 1 tbsp peanut butter
    • 1/2 cup cashews
    • 1 tbsp vanilla extract

    Recipe

    1. Line a baking dish with non-stick baking paper.
    2. Place all base ingredients except almond milk into a food processor. Blend until you get a fine, crumbly dough.
    3. If the mixture is too dry and doesn’t hold together when pressed, add small amounts of almond milk until it becomes sticky.
    4. Firmly press the base into the prepared dish and refrigerate.
    5. Blend all topping ingredients in a mixer until smooth.
    6. Pour the mixture over the base and smooth with a spatula.
    7. Place in the fridge to set for at least 30 minutes.
    8. Slice into bars and enjoy!
