Ingredients
For the base:
- 1 cup almonds
- 1 cup cashews
- 1/2 cup shredded coconut
- 2 tbsp maca powder
- 2 tbsp cacao powder
- 1 cup dates
- 2 tbsp peanut butter
- 3 tbsp almond milk
For the topping:
- 2 cups frozen raspberries
- 2 tbsp açai powder
- 1 to 2 tbsp rice malt syrup
- 2 tbsp melted coconut oil
- 3/4 cup shredded coconut
- 1/4 cup chia seeds
- 1 tbsp peanut butter
- 1/2 cup cashews
- 1 tbsp vanilla extract
Recipe
- Line a baking dish with non-stick baking paper.
- Place all base ingredients except almond milk into a food processor. Blend until you get a fine, crumbly dough.
- If the mixture is too dry and doesn’t hold together when pressed, add small amounts of almond milk until it becomes sticky.
- Firmly press the base into the prepared dish and refrigerate.
- Blend all topping ingredients in a mixer until smooth.
- Pour the mixture over the base and smooth with a spatula.
- Place in the fridge to set for at least 30 minutes.
- Slice into bars and enjoy!
