Miso is a traditional fermented Japanese staple food and seasoning made from different types of grains but mainly soya and a unique koji fermentation culture.
Brown rice miso or "Genmai-miso" or "Kome-miso" is usually the mildest of all miso varieties. Unpasteurized, it has similar properties to barley miso with a slightly "sweet" flavor.
Enjoy this hearty miso all year round in sauces, spreads, casseroles, soups or stews. Miso is made from whole soybeans and brown rice, giving it a very complete nutritional profile.
During the 18 years Clearspring's founder Christopher Dawson lived in Japan he became an expert on miso quality, and the Clearspring range is his selection of the finest traditionally made Japanese miso.

Instructions
Try it instead of salt to flavor dishes such as beans, vegetable dishes, sauces, soups and stews.
Blends well with ingredients such as ginger, garlic, rice vinegar, tahini, and citrus zest and juice.
Keep in a cool and dark place. After opening, refrigerate and consume it within 6 months
Miso is a living product and the ongoing fermentation may result in the lid swelling. However, it is safe to eat. Harmless white yeast may appear in the open air but you just need to remove the skimming.
