Ghee Clarified Butter Organic

What is ghee exactly?

Butter heated slowly to drive off the water and the milk solids, until nothing but the fat is left. Kazidomi ghee is 100% clarified butter from organic farming, with no other ingredient. It remains a dairy product, with an unctuous texture and a golden colour at room temperature.

Ghee or ordinary butter in the pan?

Ghee takes a higher heat before it colours, because the water and the milk solids that brown have already been removed. Ordinary butter burns sooner and has to be watched or cut with oil. Kazidomi ghee also keeps the nutty butter taste that clarifying concentrates rather than removes.

How do I cook with it?

Use it as you would butter: in a pan to sear meat and vegetables, in the oven for baking, or melted over rice and steamed vegetables. Kazidomi ghee suits a hot pan particularly well, and a spoonful stirred into a dahl or a curry at the end carries the spices.

Does it need to go in the fridge?

No. Kazidomi says to keep it somewhere cool and dry. Ghee holds at room temperature in its closed jar, and the texture stays soft enough to spoon out easily. In the fridge it sets very hard. Always use a clean, dry utensil so nothing is introduced into the jar.

What is the size and where is it made?

The jar holds 300 g. The raw material comes from Europe and the ghee is made in the Netherlands, from butter produced under organic farming. Kazidomi lists no addition in the recipe: no salt, no flavouring, no vegetable oil. The texture can move from grainy to smooth with the room temperature.
