The fat content, which follows directly from the ratio of coconut to water. This Kazidomi milk holds 68% coconut extract, the rest being water, which lands it at 17% fat. The larger the coconut share in the recipe, the higher that figure goes.

Coconut milk or coconut cream: which should I take?

The Kazidomi milk is looser and runs to two ingredients only, coconut extract and water: it lengthens a curry, a soup or a porridge. The cream in the range is richer, contains tapioca starch and can be whipped. For a coating sauce or a whipped dessert, the cream is the one.

What do I do with an opened carton?

Tip it into a closed container and keep it in the fridge for two or three days; a carton left open as it is turns faster. Kazidomi coconut milk freezes well in portions, in an ice cube tray, so you take out only what a sauce actually needs.
