Couscous is best known for its North African cuisine. It is made from wheat groats, which are formed into small balls. These are then dried, just like many pastas.
Couscous is easy to prepare, and is eaten with all kinds of dishes. Try a couscous salad, for example, or eat it as a side dish with a tagine meal.
Like other cereal products, couscous contains relatively much fibre and protein. It is also a good source of iron, magnesium and phosphorus. Because couscous is made of wheat, it contains gluten.
