Bring some sunshine to your plate with this ultra-easy, quick, and healthy summer vegetable tart. Top it with your favorite ingredients and enjoy it hot or cold, as a starter or main dish.
Ingredients
- 3–4 tomatoes of your choice (for a nice look, use different varieties)
- 1 zucchini
- 1 puff pastry
- 1 tbsp of semolina (or polenta)
- Grilled bell peppers (100 g)
- Optional: aromatic herbs like thyme, rosemary, or herbes de Provence
- Optional: 1 mozzarella for topping
Recipe
- Preheat the oven to 180°C (350°F).
- Place the puff pastry in a tart pan and prick the bottom with a fork.
- Sprinkle semolina or polenta over the base to absorb excess moisture from the vegetables.
- Slice the tomatoes, zucchini, or other vegetables into thin rounds.
- Arrange them in a circular pattern, alternating tomato and zucchini slices.
- Season with salt, pepper, and herbs.
- Bake for 30 minutes.
- Remove from the oven and let cool for a few minutes.
