Split peas are made from a variety of small round and large peas. Harvested at full maturity, they are dried and split in two during shelling, hence its name. Split peas make delicious purees and soups . They are a good source of iron, manganese, copper, vitamins B1 and B9. Like all legumes, they are rich in protein and fibre.
