Ingredients

For the sauce:

  • 1/2 cup peanut butter
  • 2 tablespoons shiro miso
  • 1 tablespoon sriracha
  • 1 tablespoon tamari
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1/3 cup water

For the spring rolls:

  • Rice paper sheets
  • 1 yellow bell pepper
  • 1 red bell pepper
  • 1 cucumber
  • 2 carrots
  • Red cabbage
  • Smoked tofu
  • Rice vermicelli
  • A few lettuce leaves
  • Fresh coriander

Recipe

  1. Prepare the sauce by mixing all the ingredients in a bowl until smooth.
  2. For the spring rolls, slice all the vegetables into thin strips. Cook the vermicelli and the tofu cubes.
  3. Soak a rice paper sheet in lukewarm water for about 5 seconds.
  4. Lay the sheet flat on a cutting board and place your ingredients near the edge closest to you.
  5. Roll the rice paper tightly over the filling.
  6. Halfway through, fold in the sides, wetting them slightly to help seal.
  7. Repeat steps 3 to 6 for the remaining spring rolls.
  8. Dip your spring rolls in the peanut sauce and enjoy!
