Vegan spring rolls with peanut butter sauce

A new way to enjoy spring rolls with a delicious peanut butter-based sauce! Eat healthy with these homemade spring rolls, perfect for sharing with the whole family. Customize them however you like!
Ingredients
For the sauce:
- 1/2 cup peanut butter
- 2 tablespoons shiro miso
- 1 tablespoon sriracha
- 1 tablespoon tamari
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- 1/3 cup water
For the spring rolls:
- Rice paper sheets
- 1 yellow bell pepper
- 1 red bell pepper
- 1 cucumber
- 2 carrots
- Red cabbage
- Smoked tofu
- Rice vermicelli
- A few lettuce leaves
- Fresh coriander
Recipe
- Prepare the sauce by mixing all the ingredients in a bowl until smooth.
- For the spring rolls, slice all the vegetables into thin strips. Cook the vermicelli and the tofu cubes.
- Soak a rice paper sheet in lukewarm water for about 5 seconds.
- Lay the sheet flat on a cutting board and place your ingredients near the edge closest to you.
- Roll the rice paper tightly over the filling.
- Halfway through, fold in the sides, wetting them slightly to help seal.
- Repeat steps 3 to 6 for the remaining spring rolls.
- Dip your spring rolls in the peanut sauce and enjoy!
