Ingredients

For the base:

  • 1 ripe banana, mashed
  • 2 eggs
  • 230 g Greek yogurt (or plant-based yogurt for a vegan version)
  • 200 ml plant-based milk (almond, oat…)
  • 1 tbsp ube powder
  • 1 tsp baking powder
  • 30 g yacon syrup
  • 120 g semi-whole flour
  • 1 pinch of salt

For the topping:

  • 10 g shredded coconut
  • 50 g cream cheese (or plant-based alternative)
  • 20 g yacon syrup
  • 1 tsp ube powder

Recipe

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, mix the mashed banana, eggs, yogurt, and plant-based milk.
  3. Add the flour, ube powder, baking powder, yacon syrup, and salt. Mix until smooth.
  4. Pour the batter into a loaf pan.
  5. Bake for 30–35 minutes, until fully cooked.
  6. Let cool for at least 30 minutes.
  7. Mix the cream cheese (or plant-based version), yacon syrup, and ube powder.
  8. Spread over the cooled cake and sprinkle with shredded coconut.
