Ube Brownie

An ultra-indulgent recipe naturally rich in protein. This soft ube cake stands out with its melt-in-the-mouth texture and delicate vanilla-like flavor. Perfect for a healthy and original breakfast or snack.
Ingredients
For the base:
- 1 ripe banana, mashed
- 2 eggs
- 230 g Greek yogurt (or plant-based yogurt for a vegan version)
- 200 ml plant-based milk (almond, oat…)
- 1 tbsp ube powder
- 1 tsp baking powder
- 30 g yacon syrup
- 120 g semi-whole flour
- 1 pinch of salt
For the topping:
- 10 g shredded coconut
- 50 g cream cheese (or plant-based alternative)
- 20 g yacon syrup
- 1 tsp ube powder
Recipe
- Preheat the oven to 180°C (350°F).
- In a bowl, mix the mashed banana, eggs, yogurt, and plant-based milk.
- Add the flour, ube powder, baking powder, yacon syrup, and salt. Mix until smooth.
- Pour the batter into a loaf pan.
- Bake for 30–35 minutes, until fully cooked.
- Let cool for at least 30 minutes.
- Mix the cream cheese (or plant-based version), yacon syrup, and ube powder.
- Spread over the cooled cake and sprinkle with shredded coconut.
