These pistachio ice creams are the perfect snack (or dessert) for sunny days. Super simple to make, with just 3 ingredients, they offer the perfect balance of sweetness, freshness, and crunch.

Enjoy them on their own or, for those with a sweet tooth, drizzled with melted chocolate and topped with some crushed pistachios.

Prepare them in advance to always have a healthy snack on hand, without compromising on taste.

Ingredients

  • 500 g plain Greek yogurt (or plant-based version)
  • 100 g unsalted pistachios
  • 1 to 2 tbsp maple syrup

For the topping

Recipe

  • In a powerful blender or using an immersion blender, blend the pistachios with the Greek yogurt and maple syrup until smooth and homogeneous.
  • Spoon the mixture into silicone muffin molds or small ramekins. Slightly smooth the top with a spoon.
  • Place in the freezer for 3 to 4 hours, until the cups are firm.
  • When ready to serve, remove from the molds and, if desired, dip the base or top of the creams into a bit of melted chocolate. Sprinkle with crushed pistachios for a crunchy touch.
