No-Bake Low GI Protein Brownies

A fudgy, chocolatey, protein-rich brownie… without baking? Yes, please. This low glycemic index version is perfect for a filling snack or a healthy indulgent dessert without blood sugar spikes. Thanks to chocolate plant-based protein powder, it’s nourishing, creamy, and very easy to prepare. The gourmet twist: a beautiful peanut butter swirl on top that makes it even more irresistible. Prepare in advance and store in the freezer for ready-to-eat portions anytime.

Ingredients

For the brownies:

  • ½ cup cashew butter
  • ¼ cup low-sugar yacon syrup
  • 2 servings chocolate protein powder
  • A little plant-based milk (almond, oat, or cashew) to reach a creamy texture

For the topping:

  • 2 to 3 tablespoons peanut butter

Recipe

  1. In a bowl, mix the cashew butter, yacon syrup, and chocolate protein powder.
  2. Gradually add a bit of plant-based milk and mix until you get a thick but creamy batter, similar to brownie batter.
  3. Pour the mixture into a small pan lined with parchment paper and spread evenly.
  4. Add a few spoonfuls of peanut butter on top. Using a knife, create swirls for a marbled effect.
  5. Place in the freezer for at least 2 hours, until firm.
  6. Remove from the pan and cut into rectangles or small squares.

Tip:

Store the brownies in the freezer and take them out 5 minutes before eating for the perfect texture.
