These ultra-protein bagels are perfect for a nutritious breakfast or a satisfying snack. Thanks to the Pulse Protein pancake mix and Greek yogurt, each bagel contains almost twice as much protein as a classic bagel. Ideal for a balanced and filling breakfast without the need for yeast or rising time.

  1. Preheat the oven to 180°C (350°F) and place a rack in the center. Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the Pulse Protein pancake mix, baking powder, and salt.
  3. Add the Greek yogurt and mix with a spatula or by hand until a smooth dough forms.
  4. On a clean work surface, divide the dough into six equal portions. Roll each piece into a 7-8 cm (3-inch) log, then join the ends to form a ring. Press lightly to seal. Place them on the baking sheet and let them rest for 5 to 10 minutes to allow them to rise slightly.
  5. Brush each bagel with the beaten egg white and sprinkle with sesame seeds or a spice blend.
  6. Bake for 20 to 25 minutes, until golden brown. Let them cool on a wire rack for 10 minutes before enjoying.
