Ingredients

  • 1 tortilla
  • A few slices of mozzarella
  • Pesto (we used vegan pesto)
  • Cherry tomatoes
  • A few sprigs of fresh basil

Recipe

  1. Place the tortilla on a clean surface or cutting board.
  2. Make one cut from the center to the edge of the tortilla.
  3. On each quarter of the tortilla, place a different ingredient (here: tomatoes, pesto, mozzarella, and fresh basil).
  4. Fold the tortilla into a triangle, starting from the cut.
  5. Optional: grill the wrap for 2–3 minutes in a pan or sandwich press.
  6. Serve with a side salad — and there you have it: a healthy, budget-friendly, and super easy lunch!
