Buddha bowl with roasted vegetables

Ingredients

  • 150 g bulgur
  • 100 g cheese of your choice (e.g. feta)
  • Lemon juice

For the roasted vegetables:

  • 2 large carrots
  • 2 sweet potatoes
  • 1 cauliflower

For the marinade:

  • 2 tbsp vegetable oil (olive, coconut, rapeseed...)
  • Salt, pepper, paprika, spices of your choice

Recipe

  1. Preheat the oven to 200°C.
  2. Peel and dice the vegetables into small cubes.
  3. Make the marinade by mixing all the ingredients in a large bowl. Add the vegetables and stir to coat well.
  4. Spread the vegetables evenly on a baking tray lined with parchment paper.
  5. Roast in the middle of the oven for about 25 minutes. Adjust the cooking time depending on the size of the cubes—they should be tender and slightly golden.
  6. Meanwhile, cook the bulgur according to package instructions and cut the cheese into small cubes.
  7. Once everything is cooked, assemble your bowl with the bulgur, roasted veggies, and cheese. Add a splash of lemon juice.
  8. Optionally, top with sesame seeds, greens, or raw veggies, and enjoy with a dressing.
