Wrap Quiche

Forget pastry dough. We’ve found a simpler, lighter and just as delicious alternative. This quick quiche wrap is perfect for using up a leftover wrap and saving time in the kitchen. Simple, filling, balanced… definitely worth a try.
Ingredients
- 1 wrap (tortilla)
- 2 eggs (or 100 g vegan substitute if preferred)
- 3 tbsp silken tofu
- ½ tsp spices (paprika, garlic, oregano)
- 1 pinch of salt
- 1 pinch of pepper
- 1 handful fresh spinach
- 2 tbsp red onion, finely sliced
- 6 sun-dried tomatoes
- 1 tbsp pine nuts
- 1 tbsp nutritional yeast (or grated cheese)
- 1 tsp olive oil
- 1 can veggie tuna (or regular tuna)
- A few parsley leaves (optional)
Recipe
- In a bowl, whisk the eggs with the silken tofu, spices, salt, and pepper until smooth.
- Line a small round baking dish with parchment paper. Place the tortilla inside and lightly brush it with olive oil.
- Pour the mixture into the tortilla base. Add spinach, onion, tomatoes, pine nuts, crumbled tuna, and sprinkle with nutritional yeast.
- Bake in an air fryer or oven at 170°C (340°F) for about 15 minutes, until the center is set and the tortilla is golden and crispy.
- Serve hot, topped with parsley if desired, with a crunchy salad or raw vegetables.
