Ingredients
For 1 serving
- 4 g sifted matcha (or more to taste)
- 40 ml hot water (around 80°C)
- 125 ml plant-based or dairy milk of your choice
- 1 to 2 tsp ube extract
- (Optional) 1 tsp natural sweetener if needed (yacon syrup or xylitol)
For the ube cold foam:
- 3 tbsp heavy cream (or plant-based whipping alternative)
- 1 tbsp milk
- 1 tsp ube extract
Recipe
- Using a whisk or electric mixer on high speed, whip the cream, milk, and ube extract in a bowl until smooth and slightly thick.
- In another bowl, whisk the matcha with hot water until smooth and frothy.
- In a large glass, add the ube cream, the milk of your choice, and a few ice cubes.
- Gently pour the matcha into the glass.
- Finish with the ube foam on top for a creamy and visually perfect finish.
- Serve immediately and enjoy!
