Ingredients

For the cake:
- 240g whole wheat flour (T80)
- 2-3 finely grated carrots
- 80g maple syrup (or another sweetener of choice)
- 100g nut butter (here: almond, pecan & chai)
- 200ml plant-based yogurt
- 1 packet of baking powder
- 1 tsp vanilla extract
- A pinch of salt
For the cream:
- 400ml coconut cream
- 60g plant-based yogurt
- 3 tsp maple syrup
- Coconut oil
- Vanilla extract

Recipe

For the cake:

Preheat the oven to 180°C (350°F).
Mix the dry ingredients together.
In a separate bowl, mix the maple syrup, nut butter, and vanilla extract.
Gradually add the dry ingredients to the wet mixture.
Add the grated carrots.
Once everything is mixed, pour the batter into a lined baking pan and bake for 50 minutes.

For the cream:

Chill the coconut cream beforehand.
After refrigeration, scoop out the thick part of the coconut cream and leave the liquid behind.
Blend the thick coconut cream with the yogurt, maple syrup, a bit of melted coconut oil, and vanilla extract.
Spread the cream on the cooled cake and enjoy!
