Ingredients

For the sponge cake:

  • 4 eggs
  • 80 g spelt flour
  • 70 g agave syrup
  • 1 tsp baking powder

For the filling:

  • 120 g dark chocolate (at least 70%)
  • 180 ml soy cream
  • 60 g chopped hazelnuts
  • 2 servings chocolate protein powder

For the glaze:

  • 30 g dark chocolate
  • 50 ml soy cream

Recipe

  1. Preheat your oven to 180°C. Beat the eggs with the agave syrup until the mixture becomes light and fluffy. Add the flour and baking powder, then mix well. Pour the batter onto a baking tray lined with parchment paper and spread it evenly. Bake for 10 minutes.
  2. Melt the dark chocolate with the soy cream in a saucepan over low heat until smooth. Remove from heat, then add the chopped hazelnuts and chocolate protein powder. Mix well until the filling is smooth and homogeneous.
  3. Once the sponge cake is baked and slightly cooled, spread the chocolate-hazelnut-protein filling over the entire surface. Carefully roll the sponge to form a log. Let it rest in the refrigerator for at least 30 minutes.
  4. Melt the dark chocolate with the soy cream in a small saucepan. Let it cool slightly before pouring it over the log as a glaze.
  5. Place the log in the refrigerator until the glaze sets, then serve.
